David Nataf, founder & proprietor of charming Bohemian Bar & Restaurant, at the heart of Palm Beach Aruba, is happy to report that nomad Chef Phillipe Colin will be in residence at the restaurant for the Spring of 2021.
Nataf & Chef Colin first met when Nataf was traveling on his annual forays into kitchens around the globe in search of new food trends and tastes related to World Cuisine, to be introduced here.
Nataf invited the handsome, talented Michelin-starred chef to come to Aruba, help implement the latest food innovation at Bohemian’s kitchen, and bring his classic and contemporary French know-how to the island, to freshen and update menus and training.
Born in France just south-east of Paris, Chef Colin discovered his calling by cooking in his family home, with not just one, but two legendary grandmothers, with a profound knowledge of French cooking and recipes.
Having graduated culinary school as well as hotel and restaurant management courses, the young chef enjoyed a number of internships under famous regional chefs, and already in his early twenties opened his own first restaurant, then another, Le Clos Juillet, in Troyes, in the Champagne region, where he was awarded one Michelin-star after just three months of operation.
He later moved to Paris, where he earned the Gold Key, bestowed by a prestigious French restaurant listing Gault & Millau, three consecutive times, and in true French culinary tradition sold his Parisian holdings in 2016, to relocate to the Provence to become chef proprietor of the top rated Sous les Platanes, where he dazzled diners with his exceptional culinary offerings.
In between courses Chef Colin found time to stage frequent Pop Ups on Miami Beach and consult on catering in the Emirate of Fujairah, in the United Arab Emirates, a thriving business center with a great appetite for French cuisine.
But he hasn’t been to Aruba. Until now.
April, May until mid-June, you may find Chef Philippe Colin at Bohemian Bar & Restaurant, lending his special, refined touch to the menu, introducing new items and challenging the kitchen brigade with seasonal specialties.
After a difficult pandemic year, Bohemian Bar and Restaurant is grateful for this opportunity to create new dishes, sprinkled with French flair and bohemian passion, in the unique garden setting, tucked away underneath tall seagrapes on the corner where Barceló Resort meets the Hilton Aruba Caribbean Resort & Casino. Lounge music fills the air as young, dynamic dining room staffers, in iconic berets and suspenders, serve cocktails, dinner and drinks with unmistakable French chic.
